Chef Waite will teach up to 10 guests how to prepare rice, select and cut fish, and create rolls and nigiri. He will also share simple recipes for sauces, and tricks for zero waste cooking. Class includes five copies of the cookbook, “Sushi Master: An expert guide to sourcing, making and enjoying sushi at home,” featuring Waite and other well-known sushi chefs.

Chef Davin Waite is co-founder and executive chef of Wrench & Rodent Seabasstropub, The Whet Noodle, and The Plot restaurants in Oceanside, CA. Waite began his career as a sushi chef at Ichiban in Santa Barbara under the instruction of Chef Hiro, a local legend and master of sushi as well as French and Italian Cuisine, and in San Diego at Cafe Japengo. His omakase at Wrench & Rodent Seabasstropub in Oceanside is one of the most creative and in-demand menus in town. Waite is a strong proponent of zero waste cooking and sustainable techniques while using local and seasonal ingredients in radically innovative ways that always keep eaters on their toes.
